Weight Loss and Superfoods – Red Beets

Ok, well, this is frustrating. Sigh. However, I did drink my lemon tea before I weighed myself rather than after, and I have been really stressed this past week, so that’s also a good reason for some weight gain. I will not let this get me down – it’s only one pound, not 10. Disappointing but I am not discouraged!

So, let’s move on to better things!

Try not to groan. Beets are a wonderful food to add to your repertoire! I had young beets in Ireland, fresh out of the garden, along with carrots and very mild, sweet parsnip, drizzled with olive oil, seasoned with fresh rosemary (also from the garden) and grilled in the oven. My sister-in-law is a GREAT cook. Delicious!
